1/2 kg King Edwards potatoesA splash milk 1 Tbsp of butternutmeg 2 Pickled onionsA splash of Cognac Sea saltFreshly ground black pepper 2 orangesZest of 1 lemon 3 Tbsp of sugar1 Tblsp of balsamic vinegarHoney2 gammon steaks (about 150g each)1 Tbsp of butter
Start by making your mashed potato. Peel the potatoes and cut them into even- sized pieces. Boil the potatoes but make sure you only cook them until tender and not so they start getting ragged around the edges or they'll become water-logged. Once done drain and pop them back in the hot pan to eliminate leftover moisture.
Once you have nice, dry, cooked potatoes add milk and put the pan back over the heat until the liquid is also hot. Add a good knob of butter. Then mash quickly until smooth. Season, with nutmeg salt and pepper
Now make the orange Sauce. Zest the lemon and oranges and juice the oranges.
In a pan add the sugar and vinegar and stir until it dissolves and starts turning into a syrup. Add the orange juice and zest. Add finely-sliced pickled onions. Stir well and add the honey. keep stirring and adding more honey until the sauce thickens.
In the meanwhile start cooking your steaks. Place a non-stick pan on the medium high heat and wait until its hot. Add the butter and wait until it melts. Add your gammon steaks and cook for about 2 minutes on each side or until the edges are brown.
Serve the fried gammon with the mashed potato and pour the orange sauce over it.
