500g fresh spinach, stalks removed
2 eggs, beaten
1 Tsp, garlic puré
100g white breadcrumbs
pinch of freshly grated nutmeg
50g freshly grated parmesan
Sea Salt
Freshly ground black pepper
Olive oil, for frying
Start by bringing a pan of water to a boil on a high heat. Once boiling, introduce the washed spinach and blanch them for about 2 minutes.
Drain the spinach onto a colander and let it cool down for a few minutes. Once cooled, squeeze out all the water with the help of your hands and then chop them finely.
Now, in a separate bowl mix all the remaning ingredients, except for the oil, with the spinach until it binds together. If the mixture is too wet add some more breadcrumbs.
Place a shallow frying pan on a medium heat with enough olive oil to cover the base.
Roll your spinach mixture into balls the size of walnuts and fry in the hot oil until golden. About 3-4 minutes on each side.
Drain on kitchen paper and serve warm.
